We were first introduce to Posh Fish Fingers at a playdate about 3 years ago and have been making them ever since. I’ll have to be honest, it is much quicker if you don’t let the kids get involved, and there’s far less mess to clear up. But, they do love helping to create their dinner and it’s so cute to see them each at their station doing their part of the cookery task!
We use cod or haddock fillets, or sometimes smoked haddock fillets just for variety. They don’t seem to mind which; they scoff them whichever!
You could make traditional breadcrumbs, but we really like the crunchy texture of the cornflakes. And it’s fun to take it in turns to put them in a zip-lock bag and bash the heck out of them!

- 2 cod fillets you can use haddock too
- 3 fistfuls Cornflakes
- 1 egg
- 3 tablespoons plain flour
- butter or sunflower oil or a bit of both
Ingredients

- Put the cornflakes in a ziplock bag and crush. Or give it to the kids to crush! Tip into a bowl.
- Crack the egg into a bowl and whisk it up. Again, a great job for the kids.
- Put flour into a third bowl.
- Get a large empty plate ready and put it at the end of the 'workstation'.
- Slice the fillets up into finger shapes. They can be different sizes, daddy ones, mummy ones and baby ones.
- Roll the fish finger first in flour, then in egg, then in the smashed cornflakes. Repeat until you have done all the little fingers.
- Heat the oil or butter in a large frying pan over a medium heat.
- Add the fish fingers and fry for around 4 minutes each side. The exact time depends on how big the fingers are and how crunchy you like the coating.
- Enjoy!

What a clever way to batter to the fish without dangerous deep frying.
