Vegetable Pilau Rice
A super easy and very tasty vegetable pilau rice dish to accompany curry. Great for getting a few more veg into your family’s diet too!

  1. Peel the carrot and cut into very small cubes.
  2. Heat the ghee in a large pan with a tight-fitting lid.
  3. When the ghee has melted, add in the cloves.
  4. When the cloves start to pop, stir in the rice and vegetables. Stir until they are all coated in the ghee.
  5. Add 600ml of boiling water and bring it all to the boil.
  6. Cover the pan, them simmer on the lowest setting for 12 to 15 minutes until the rice is tender.
  7. Let the steam dry off, then fluff up with a fork.
